The cane is mature when the seed heads turn brown, then it's cut and pressed to extract the juice. The juice is collected in a large vat where it's boiled and evaporated in a process similar to the production of maple syrup. Sorghum molasses is sweet, but it has exceptionally complex depth too.
The sorghum juice is then heated to remove all the impurities. As the sorghum juice boils, the impurities rise to the top where they are skimmed off and removed. The heating process also causes the sorghum juice to thicken. Good sorghum has a thickness similar to that of honey, although sorghum tends to have a sweeter taste.
